Artisanal Drinks, Made by Hand

"Artisanal" is a word that gets used loosely. At a bar it should mean something specific: drinks built by hand, from ingredients that were chosen, prepared and balanced with care.

Fresh before fast

The simplest test of an artisanal drink is what went into it. Fresh fruit, fresh herbs and freshly squeezed citrus taste different from bottled concentrates, and the difference shows most in mocktails, where there is no alcohol to hide behind.

We prepare our mixers and garnishes with that in mind, and we cut citrus, mint and fruit at the venue rather than long before service.

House-made mixers

Syrups, shrubs and purées are the quiet foundation of a good menu. When a bar makes its own, it controls sweetness, acidity and flavour instead of accepting whatever comes in a bottle. House-made mixers also let a menu change with the season: mango when it is in fruit, pineapple and watermelon through the heat, and ginger when the air turns cool.

Our menu is built around mixers of this kind, from the pineapple and ginger in the Pineapple Ginger Fizz to the passionfruit in the Mango Passion.

The ice question

Ice is an ingredient, not an afterthought. Clear, hard, cold ice melts slowly, so a drink stays cold without becoming watery. We plan the ice supply for each event and size it to the guest count, the weather and the length of the evening, because warm Kerala afternoons use a lot of it.

Garnish with a purpose

A garnish should add aroma, flavour or colour, never clutter. A twist of citrus releases oils across the surface of a drink, mint offers fragrance as the glass is lifted, and a slice of fruit signals what is inside. Because garnishes wilt quickly in the heat, we prepare them in small batches and replace them through the evening.

Small batches, big difference

Preparing in small batches means ingredients are used while they are at their best. Herbs stay green, juice stays bright and syrups taste of the fruit rather than of the bottle. It takes more planning than opening a carton, but it is the most dependable way to taste the difference.

Consistency is craft too

Artisanal does not mean unpredictable. Measuring, tasting and repeating are what make the hundredth drink match the first. Our bartenders follow set recipes and tasting routines, and most hold hospitality qualifications, so each glass leaving the counter has been checked.

A menu that follows the season

Kerala's fruit calendar shapes what is possible. Mango, pineapple and watermelon are at their best in the heat, citrus is dependable all year and ginger and spice come into their own on cooler evenings. When we plan a menu we look at what the event date will offer, and we adjust drinks to match.

Why it matters for your event

Guests rarely remember a menu, but they remember how a drink tasted and how it was served. Handmade drinks give your event a quiet sense of generosity, and they photograph and taste better than anything poured from a carton.
